#1: Sweet Potato
Welcome to the first A2Z Personal Training weekly immunity boosting food post. The aim of these posts is to give you an idea of which foods will help keep your immune system up and running along with a quick recipe. Enjoy!

Within the orange variety sweet potatoes you will find anti-viral, anti-cancer and antioxidants all thanks to beta-carotene which your body uses as Vitamin A. As a bonus you’ll get a good dose of Vitamin E which is fantastic for your skin.

This vegetable is full of fiber, especially the skin, can help lower your cholesterol and enhance digestion.

Sweet Potato Summer Salad (serves 4)

  • 3 sweet potatoes cooked in their skin, diced
  • 4 spring onions, sliced
  • 2 celery sticks, sliced
  • 70g walnuts, chopped
  • 1 green pepper, sliced
  • 200ml white wine vinegar


Place all ingredients in a large salad bowl and mix together thoroughly. Serve as a side dish.
