#3 Potatoes

After your dose up of beta-carotene and recent talks with my doctors about Vitamin C I wanted to introduce potatoes today.

 

Potatoes are full of vitamin C – in fact, it’s one of the cheapest ways to get your daily dose of vitamin c and keep your immune system in top shape. The best part of the potato is the skin, which is full of fibre, helping keep your cholesterol down and assist in digestion.

B6 is also another helpful vitamin found in potatoes that help make immunity boosting amino acids in the body

Ga-tato Smash (serves 4)

  • 6 medium potatoes, peeled & diced
  • 5 cloves garlic
  • 300ml milk
  • 4 tbsp olive oil
  • 1 tsp salt
  • 1 pinch black pepper
  • 1 tsp ground nutmeg


Boil the potatoes and garlic in the milk until tender, topping up with water to keep them covered. Add remaining ingredients and mash together until smooth and creamy. Serve as a side dish.
